Fruit salad with verbena syrup

What dessert can be healthier for kids than a delicious fruit salad? My daughter loves fruits, she also loves simple and easy to make fruit salads, but this time we did it a bit differently. It is still a simple and quickly done recipe, but has more freshens and is great for summertime. I love the smell of lemon verbena: it’s so light, so lemony and so summery:) So this time, our fruit salad was served with the homemade lemon verbena syrup. It was so delicious that my daughter asked for more!

Fruit salad with verbena syrup

Ingredients

  • watermelon
  • honey melon
  • cantaloupe melon
  • (you can also use other fresh fruits of your choice)
  • 1 cup of water
  • 3 tablespoons of lemon verbena
  • 1 teaspoon of lemon juice
  • 1/2 cup of sugar (you may adjust to your taste)

Preparation

Step1 Prepare lemon verbena syrup. Bring the water and sugar to a boil in a small saucepan. Add lemon verbena leaves and cover the pan. The best is to use fresh leaves, but you can also use dried ones. Boil everything for 1 min and then steep for 10 minutes. Remove verbena leaves through a strainer, then let cool the syrup. If you made more syrup than what you need for the fruit salad, you can store it in the fridge for up to 4 days.

Step2 Use cookie cutters to cut cute and funny shapes from fruits. For some reason, butterflies, hearts or flowers taste usually better than simple squares:) Put all the fruits in a bowl and cover with the verbena syrup. Cover the bowl and keep in a fridge for about 1 hour before serving this delicious fruit salad. Enjoy!
