My daughter loves avocado. Recently she also started to like nuts and almonds. In fact, the first time when she tried almonds they were inside an olive! As she likes olives, she decided she also liked almonds. Logical:)
Some time ago, a friend of mine gave me a recipe to make a soup from almonds and avocado, so I decided to try it on, thinking that my daughter might like it. Bingo! She loved it! I think she especially loved to fish almonds and avocado in her soup :)
Ingredients
- 35 almonds (without skin)
- 1 red pepper
- 2 slices of bread
- 6-8 parsley springs
- 1/2 teaspoon of saffron
- 750ml of vegetable broth
- 1 avocado
- lemon (or lemon juice)
- salt, paper
- 3 gloves of garlic
- 2 tablespoons of oil
Preparation
Step1 Coat the pot with oil. When hot, then fry almonds until pale golden. Remove them from the pot and leave aside.
Step2 Cut red pepper, bread and garlic into cubes. Put them in the same pot where the almonds were fried. Add parsley, leaving a little bit for the decoration at the end. Add saffron, a little bit of salt and paper. Cook for around 10 min, stir frequently. When cooked, add 25 almonds and mix everything using a blender or a mixer.
Step3 Prepare the vegetable broth following instruction on the package you bought. When ready, add it to the preparation from Step2. Stir regularly and let it cook for a few more minutes. In the meantime, prepare the avocado: cut it into cubes and spread with lemon juice. You can also cut some funny shapes using cooking cutters.
Step4 Pour the soup into a bowl. Add a few almonds and avocado cubes in the soup. Decorate with parsley and avocado. Enjoy!
