My daughter’s favorite ‘doudou’ is the rabbit, so I decided to make her a surprise. These pancakes made of cauliflower, cheese, egg and flour, together with some small veggies make a delicious meal. She was really happy and ate it all!
Ingredients
- 4-5 medium cauliflower florets
- 5 tablespoons of grated cheese
- 1 tablespoon of flour
- 1 egg
- 1 teaspoon of nutmeg (powder)
- 1 radish
- 1 black olive
- 1 carrot
- chive
- salt, paper
Preparation
Step1
Cook the cauliflower in the salted water for about 10min, until tender. Place it in a bowl and smash with a patato masher. Add grated cheese, egg, flour, nutmeg, salt and paper. Mix everything together with a spoon.
Step2
While the cauliflower cooks, prepare all the pieces for the rabit head: cut off the radish for the rabbit nose, then cut two radish slices for the eyes (white). Cut two rectangles from the radish for the teeth and stripes of chive for the moustache. Cut the black olives for the eyes (pupil).
Step3
Make a flower from the carrot. Use the pencil sharpener to cut a big thin slice of carrot (the best is the big pencil sharpener, always good to have one only for the kitchen). Take the carrot slice and turn it gently around to make a flower. Cut a small slice of a black olive and place it in a middle. Use the chive for the flower stem.
Step4
From Step1, fry the cauliflower pancakes, around 3-4 min on each side. Make 8 shapes: one for the rabbit body, one for the head, two for the ears, four for the paws – two smaller and two bigger.
Step5
Place the pancakes on the plate and decorate the rabbit head. Enjoy!
