I took advantage of the upcoming St Patrick’s Day to make this easy cream of asparagus soup. My daughter has never had asparagus before; I think she may have tried it once, a long time ago, when I was having an asparagus salad and she did not like it too much… So I needed a trick to make her try this soup. I started with a St Patrick’s Day story and I made a clove from cheese that I placed onto her soup bowl. I already had a table mat full of cloves, so it was just perfect for our little game: we were counting all the cloves while eating a soup:) My trick worked out great, she loved the soup!
Ingredients
- 400g of asparagus
- 1/2 of onion
- 2 tablespoons of sour cream
- 2-3 tablespoons of flour
- 3 cups of vegetable or chicken broth
- 3 tablespoons of butter
- 1 slice of cheese
- spices: salt, pepper
