Cream of asparagus soup – easy recipe for St Patrick’s Day

I took advantage of the upcoming St Patrick's Day to make this easy cream of asparagus soup. My daughter has never had asparagus before; I think she may have tried it once, a long time ago, when I was having an asparagus salad and she did not like it too much...  So I needed a trick to make her try this soup. I started with a St Patrick's Day story and I made a clove from cheese that I placed onto her soup bowl. I already had a table mat full of cloves, so it was just perfect for our little game: we were counting all the cloves while eating a soup:) My trick worked out great, she loved the soup! Ingredients

  • 400g of asparagus
  • 1/2 of onion
  • 2 tablespoons of sour cream
  • 2-3 tablespoons of flour
  • 3 cups of vegetable or chicken broth
  • 3 tablespoons of butter
  • 1 slice of cheese
  • spices: salt, pepper

 

Preparation

Step1 Cut off woody ends of asparagus; cut stalks into 1-1/2-inch (4 cm) lengths. Prepare the vegetable or chicken broth following the instructions on the package you bought.Cream of asparagus soup - easy recipe step1

Step2 In a saucepan, melt butter and add onions. Stir all the time and when onions are turning golden add 1 tablespoon of flour.Cream of asparagus soup - easy recipe step2

Step3 Add asparagus and pour in broth. Bring to boil; reduce heat and simmer until asparagus is tender, about 5 minutes. Remove 1/2 cup of the liquid: add sour cream and flour and mix together well. Pour it back to the soup and stir well. Cook for 1-2 min.Cream of asparagus soup - easy recipe step3

Step4 Mix everything together using a blender or food processor. Pour into a soup bowl. Cut a clover using a cookie cutter or a knife and place it gently on the soup. Enjoy!Cream of asparagus soup - easy recipe step4
