Mushrooms in a forest – meatballs with zucchini mousse

This meal is brought to you by MY Daughter! She did the meatballs almost all on her own. I just prepared the meat and she made all the balls from the meat. It actually worked great, as it was a perfect size for her little hands. She had a lot of fun and was very proud she could make all that! She also helped with the zucchini mousse – I had no idea that using a blender would make her so happy:)

Originally we only planned this meal with two trees and two meatballs ‘mushrooms’, but she wanted to add something more. So we added one toadstool and the moon. My husband and I had the same meal, but without the fancy presentation. That is yet another example of one meal for the whole family with two different styles, making everyone happy!Mushrooms in a forest - meatballs with zucchini mousse with title

Ingredients

  • 2 zucchini
  • 1 onion
  • 3 eggs
  • 1 tablespoon of sour cream
  • 2 tablespoons of flour
  • few slices or cubes of feta cheese
  • 500g/18once of ground beef
  • 1 round bread
  • oil and spices: parsley, salt, pepper, basil
  • 1 tomato
  • creamy cheese (e.g. Philadelphia)

Did you know that many species of mushrooms seemingly appear overnight, growing or expanding rapidly?

Preparation

Step1 Preheat your oven to 360F/180C.  Chop the onion and the zucchini and fry it with oil and spices until tender. Stir regularly. In the meantime, cut feta cheese into small irregular pieces. Step2 When zucchini is ready, mix it with your blender. Add 2 eggs, flour and sour cream and mix everything together. Add pieces of feta cheese and stir gently. Pour the preparation into separate molds. Bake in the preheated oven for about 30-40min. Step3 While the zucchini mousse bakes, prepare the meatballs. Mix ground beef with 1 egg, bread and spices. Bread must be soaked in the water first and the water excess must be removed. When all the ingredients are well mixed, form round balls. Fry them on both sides in a pan with oil until well cooked. Step4 Use two meatballs to make edible mushrooms, you may add some gravy on top if you like. Make a toadstool with a tomato and creamy cheese. Cut tree shapes from the zucchini mousse – use a knife or a cookie cutter. Make the moon from the creamy cheese. Enjoy!Mushrooms in a forest - meatballs with zucchini mousse
