Happy train sandwich

Preparation time: 15min   |  Servings: 1 Happy train sandwich for kids

As my  daughter gets older, I ask her to put away toys that she no longer plays with. One of these toys was a little train she used to play with a lot. She loved its colorful, wooden blocks and each time was assembling them differently to make a new train that was travelling all around. But one day she said we could put it away as she was too old to play with it. I could feel that it was a hard decision for her so we made this happy train sandwich to say ‘good-bye’ to her toy. She was very happy with the result!

 

Ingredients

For the train:

  • 1/2 of small baguette
  • 2 radishes
  • 1 carrot
  • a piece of cucumber
  • 1 thin slice of ham
  • few grains of canned corn
  • chive

For the fellows:

  • 2 cherry tomatoes: red and orange
  • 1 black olive
  • a piece of cucumber
  • cheese
  • top of a pepper
  • 2 toothpicks

For the fillings:

  • 2-3 tablespoons of canned tuna
  • 1/2 teaspoon of lemon juice
  • 1 ‘laughing cow’ cheese
  • 1-2 tablespoons of smashed avocado
  • 1 cherry tomato

Preparation

Prepare the fillings:

1st – cut a cherry tomato in cubes and mix it with avocado in a bowl. You may add some spices and few drops of lemon juice.
2nd – in a bowl, mix tuna, lemon juice and the cheese

Cut the baguette in 3 pieces. Cut off tops of each piece.

Locomotive: spread half of the tuna filing on one of the baguette’s piece. Make a roll from cucumber and ham – cut them in the same size as the bread. Place the roll on the filling. Cut two sticks from the carrot and place them in the tuna filling in front of the roll. Place some grains of canned corn on the sides for decoration. Cut slices of radish and place them as wheels – make the first wheel half of a slice only.

Coaches:

1st – spread the avocado filling on the bread. Cut off a top of a tomato and place it on the roll from step3. Cut of a top of olive, it will make a fellow’s hat. Make a fellow from the cherry tomatoes – red for the body and orange for the head – connect them with the olive hat using a toothpick. Place the fellow in the filling.
2nd –  spread the tuna filling on the bread. Cut a piece of cucumber. Use a cookie cutter or a knife to cut a flower from the cheese. Connect cucumber, cheese, olive and pepper using a toothpick. Place the fellow in the filling. Use a cookie cutter or a knife to cut two small flowers from the cheese. Place on the coach.
Cut radish slices to make wheels.

Make rails from the chive directly on the plate and place the locomotive and railcars on them. Connect them with carrot sticks. Enjoy!

Warn the child before the consumption that there is a toothpick inside!
