Hot, hot, hot... But I will not complain, I think I prefer this than -45C/-113F we had this winter. When it is so hot outside, I prefer not to cook hot meals during the day to avoid additional few degrees coming from the oven. So today we had made delicious tortilla wraps for lunch. My daughter loves rolled tortilla wraps and she likes almost everything I would put inside it. This time however, we decided to make them a bit differently. As it was so hot outside, we rolled them up as ice cream cones. We put all the veggies and some chicken inside and topped it with swirled creamy cheese. Yummy!
1 slice of cooked or grilled chicken breast
6 cherry tomatoes
6 slices of cucumber
few thin slices of pepper (can be different color)
slices of avocado
creamy cheese (e.g. Philadelphia)
Did you know that the wrap probably comes from California, as a generalization of the Tex-Mex burrito, and became popular in the 1990s?
Step1 Cut the tortilla in half and spread it with hummus if you like, then roll it up to make a cone:
Step2 Garnish tortilla wraps with veggies and chicken, just insert all ingredients inside the cone. Use the pipping bag to make nice swirl "ice cream" decoration from cheese on top of each tortilla wrap. You can serve the wraps on the plate or in a cup/glass, which is even more spectacular for kids, as it looks like a real ice cream:) Enjoy!
