Zucchini madeleines are yet another smart way to make your kids eats veggies :) This recipe is super easy to make and will be a great hit with your kids!
It can be prepared as an afternoon snack or also make a great side dish for dinner.
When I made these zucchini madeleines for the first time, we had guest at home and both kids and adults loved them! They also made a great 'surprise' effect as no one expected madeleines for dinner :)
Ingredients
2 zucchini
1/2 of onion
2 eggs
1 tablespoon of sour cream
6-8 tablespoons of flour
few slices or cubes of feta cheese
spices: salt, paper
Preparation
Step1 Preheat your oven to 360F/180C. Chop the onion and the zucchini and fry it with oil and spices until tender. Stir regularly. You can add some spices if you wish to.
Step2 In the meantime, while zucchini fries, cut feta cheese into small irregular pieces. Place them into the freezer for about 10min.
Step3 When zucchini is ready, mix it with your blender. Add 2 eggs, flour and sour cream and mix everything together. If the mixture is too liquid, add some more flour. At the end, add pieces of feta cheese and stir gently.
Step4 Pour the preparation into madeleines molds. Bake in the preheated oven for about 20-30min. Check regularly with the wooden stick, if your zucchini madeleines are ready. Enjoy!
