One of my tricks to make my daughter eat fruits and veggies is to sneak them into her meals somehow… It works really great each time! This time, I have made her some peach muffins, which she loved, although she doesn’t like peaches too much.
Summer time is ideal for making them, as you can easily get great quality peaches everywhere. Outside of the season, you could also make a try with canned peaches, I have not made muffins with them yet, but that could work pretty well too.
Ingredients
- 1/2 cup of flour
- 1/4 cup of sugar
- 1/4 cup of butter
- 1 egg
- 2-3 peaches (if they are small use 2 for muffins, if big, one should be enough)
- 1 teaspoon of baking powder
- 1 teaspoon of vanilla extract
- pinch of salt
- 1-2 tablespoons of chocolate chips
Preparation
Step1 Preheat your oven to 360F/180°C. Melt butter in a small saucepan or heat-proof bowl in the microwave. Cut one peach into slices. Peel-off 1 or 2 peaches (depending how big they are) and cut them into small pieces. You can either use the peaches directly or mix them a bit.
In one bowl, beat eggs with sugar using an electric mixer until smooth and creamy. Then add butter, vanilla extract and peaches. Stir gently.
