Stuffed eggplant boats

We have made these stuffed eggplant boats inspired by all the amazing sailing boats we have seen last weekend. We have moved recently from Canada to the south of France and it was the first time my daughter has seen a big port full of all kind of boats. She was really impressed and was talking about sailing on our way back home.

I had some baby eggplants at home, so I have decided to make her a sailing boat! It is very easy to make, I used some veggies and couscous as a filling, but you may also add some meat to it, if you want. Hope your kids will like this recipe!Stuffed eggplant boats

Ingredients

  • 2 baby eggplants
  • red, orange and yellow pepper
  • few slices of onion
  • 1 clove of garlic
  • 2 mushrooms
  • 1 small zucchini
  • 2 tablespoons of grated cheese
  • spices: salt, parsley
  • 4 tablespoons of couscous
  • oil
  • 4 toothpicks

 

Preparation

Step1 First , wash and dry the eggplants. Cut off the ends and then, cut the eggplants lengthwise. Use a spoon to scrape out most of the inside, leaving a nice “boat” that would hold the filling. Repeat that for all eggplant halves. Then, cut the inside of the eggplant, zucchini and mushrooms into cubes. Fry it with onion, garlic and spices. Stuffed eggplant and pepper boats step1

Step2 In the meantime, prepare the couscous following the instructions on the package you bought. When the veggies and the couscous are both ready, mix them together and stuff the eggplants with this filling. Put some grated cheese on top and bake them in the preheated oven for around 20min t 180C/360F. Stuffed eggplant and pepper boats step2

Step3 Prepare the pepper: cut triangle shapes that you will use to make the sails. Stuffed eggplant and pepper boats step3

Step4 Use a toothpick to mount the sail made of pepper onto the eggplant boat. Remember to warn your kids that there is a toothpick inside the stuffed eggplant. Enjoy!Stuffed eggplant and pepper boats step4
